Duchess Potatoes, a French Dish that looks like a Meringue!

What a lovely Meringue! Oh wait, this is actually a French potato dish called Duchess Potatoes. It's combining potato puree with butter, salt, pepper, nutmeg, and a lot of egg yolks, which brings out the rich flavor of this dish. Then, the mixture is piped onto baking sheet, chilled, and baked. In order to maintain those these beautiful edges, mixture needs to be cold right before baking!
